Delicious recipe for Coconut Milk Cookies
Ingredients:
1 cup of wheat flour
1 cup of shredded coconut
½ cup of sugar
½ cup of butter (at room temperature)
1 egg
1/2 cup of milk
1 teaspoon of baking powder
1 pinch of salt
Preparation
In a large bowl, mix the butter with the sugar until you get a smooth, pale cream.
Add the egg and beat until fully incorporated.
Add the milk and vanilla essence if you want to give it an extra touch of aroma.
In another bowl, mix the flour, baking powder, a pinch of salt, and the shredded coconut.
Add the dry ingredients to the wet mixture and combine until you have a soft dough that isn’t too sticky.
Using a spoon or your hands, form small balls or discs and place them on a greased baking sheet or one lined with parchment paper, leaving space between each one.
Place in a preheated oven at 180°C and cook for 15 to 18 minutes, until the edges are golden brown.
Remove from the oven and let cool on a wire rack to keep them crisp.
