Cloud Cake (Fluffy Cotton Cheesecake) Recipe

✅ You need (18 cm round pan)

Cream cheese mix

  • 250g cream cheese (soft)

  • 50g butter

  • 100ml milk

  • 60g flour

  • 20g cornstarch (Maizena)

  • 6 eggs (separate yolks + whites)

  • 90g sugar (split)

  • 1 tsp vanilla

  • 1 tbsp lemon juice (optional)

  • pinch of salt

For topping

  • Powdered sugar


✅ Step-by-step (Perfect fluffy result)

1) Prep the pan + oven

  • Line the bottom with baking paper

  • Wrap outside of the pan with foil (so water doesn’t enter)

  • Put oven on 150°C (top + bottom)

  • Prepare a water bath (bain-marie): a tray with hot water in the oven


2) Melt the cheese mixture

In a pot on low heat:

  • milk + butter + cream cheese
    Mix until smooth and creamy.

Remove from heat, let it cool 2 minutes.


3) Add dry ingredients
